Flourless Emergency Chocolate Mug Cake by Heather’s Dish

•  1/4 cup marshmallows
• 2 Tbsp peanut butter
• 2 Tbsp chocolate chips
• 1 Tbsp cocoa powder
• 1 Tbsp milk
• 1 egg white

Mix everything together in a large mug.  Microwave for 1-2 minutes, stirring at the 30 second mark (helps mix in the marshmallows a bit more).  You want it to be a LITTLE bit moist in the middle still – that means it’s done but not overdone!  EAT!

I’ve had a truly awesome summer. And now I’m counting down the hours until it all comes to an end. It’s finally sinking in, I’m about to be a clinical clerk at the Philippine General Hospital, going on 24-hour duties every three days at the ER and wards, now expected to KNOW things and DO more than just occupy space. I will have actual patients for whom I’ll be responsible—I’ll have to insert their lines, extract their blood, run their labs, wait for them to finish labor and deliver their babies, endorse their cases to residents and consultants. It’s all so overwhelming, daunting, even frightening. And yet, exciting too; I remember how a friend from 2013 described her clerkship experience: she said it was the first time she felt that she was part of a team in patient care. How comforting that is. More than these photos, it is this thought I’ll be holding onto for the next ten months. Let’s go, clerkship. I’m ready.
